As the summer draws to a close, we can still make the most of our last few pleasant days in the sun with some thirst-quenching tipples and fresh bites to eat. 

As the summer draws to a close, we can still make the most of our last few pleasant days in the sun with some thirst-quenching tipples and fresh bites to eat. 

If you’re entertaining guests in the sun, try kicking proceedings off with our feta, watermelon and prosciutto canapes. The creamy saltiness of the feta cheese and the smokiness of the prosciutto offset by the subtle sweetness of the watermelon make for a delightful pre-meal bite!
When it comes to summer drinks, the exotic heritage of the mojito lends itself perfectly to the kind of fresh, vibrant and summery flavours we crave whilst enjoying the sunshine.

Ingredients:

Mojito (serves 3) Feta, watermelon and prosciutto canapes (serves 3)
Limes Feta cheese (cubed)
Fresh Mint Watermelon (cubed)
Sugar Prosciutto
White rum Fresh mint
Soda water

Method:

  1. Prep by cutting your feta cheese and watermelon into cubes and rolling the prosciutto into a similar size
  2. Skewer the all the ingredients along with some mint for a refreshing sweet and savoury mouthful!
  3. For the mojito, mash lime, mint and sugar in a glass
  4. Add ice and pour the white rum
  5. Mix well
  6. Garnish with lime and a sprig of mint
