Chocolate soufflé
Ingredients
- 20 g flour
- 200 ml milk
- 200 g dark chocolate (70% cocoa)
- 80 g egg yolks
- 200 g egg whites
- 150 g confectioner's sugar
- 1 tablespoon powdered cocoa
- butter
Preparation
1 Grease the ceramic ramekins with butter and place in the refrigerator for 5 minutes.
2 Combine flour with milk. Pour into a saucepan and bring to the boil to obtain a smooth mixture.
3 Melt 200 g of chocolate in this mixture. When the mixture cools down, add the egg yolks. Beat the egg whites until firm peaks form. Then, add confectioner's sugar.
4 Carefully fold the beaten egg whites into the chocolate mixture. Pour the batter into the ramekins.
Tip: Ingredients are sufficient for approximately 8 ramekins.
