Zuccini soufflé
Ingredients
- 3 eggs
- a pinch of salt
- a pinch of pepper
- 3 cloves garlic
- 1 large courgette (zucchini)
- 1 tablespoon flour
Preparation
1 Grate and salt the zucchini. Wait for the excess liquid to drain.
2 Whisk the eggs; add the zucchini, crushed garlic cloves, and flour. Mix well.
3 Lightly oil the ceramic or glass ramekins. Only fill half way.
4 When done, turn the ramekins upside down to release the soufflé.
Tip: Zucchini soufflé can be served as a starter or a side.
