Ingredients

  • leg of deer
  • 1 onion
  • 1 carrot
  • 1 parsley root
  • 1 sprig thyme
  • strip lemon zest
  • 5 seeds berries (allspice)
  • 100 ml wine
  • 100 g bacon

Preparation

1 Pull the membrane off of a well-aged deer leg.
2 Season with salt and lard with bacon.
3 Place the meat onto the baking tray. Add vegetables, seasoning, and wine.
4 Pour boiling fat over the meat.
5 Baste the meat with the juices it releases during roasting.
Tip: Serve the venison with pressed cranberries, mixed with red wine.
