This is where this month’s vibrant trinity of Greek yoghurt, cucumber and dill comes into its own, with Mediterranean-inspired evocations. Tzatziki is a much-loved and versatile staple, whilst there are also a number of other creative ways to bring together these Mediterranean ingredients.
Tzatziki: A fresh summery dip to accompany a range of different dishes, tzatziki is a classic Greek staple. It’s also easy to whip up, leaving you lots of time to focus on your main dishes. Starting with Greek yoghurt, add de-seeded and grated cucumber, chopped garlic and a touch of olive oil before stirring together to combine. Then finely chop some fresh dill and mint, and add a squeeze of lemon. More than simple a dip, tzatziki can serve as a great accompaniment to grilled meats, fish and salads.
Roast salmon: For a light, summery fish dish, roasting salmon is quick and delicious. For the marinade, combine yoghurt, mustard, dill and parsley before seasoning with salt and pepper. Roast until the salmon is cooked throughout, usually around 8 minutes for a fillet, then sprinkle with some sprigs of dill. Serve with some a fresh salad of watercress and spinach leaves alongside some buttery new potatoes and a generous helping of your homemade Greek yoghurt, cucumber and dill dip.
Greek-style chicken kebab: Ensure the chicken is marinated to ramp up the punch of flavour – for a Greek-style hint of spice, use oregano, mint, cumin, coriander, paprika and cinnamon with some garlic and lemon. Cover and chill for at least three hours to make sure the meat is nicely infused. Serve your grilled chicken on a fluffy pitta bread with some shredded lettuce, red onion, tomato and a dollop of yoghurt dip.
Salad: For a more substantial combination to tzatziki, you can create a summery salad to accompany a range of dishes. Simply combine sliced cucumber and red onion with a touch of yoghurt, dill, cider vinegar and honey for a hint of sweetness.
Soup: During summertime, chilled soup is a brilliantly refreshing option that you may not have considered before. For this refreshing summer revelation, try blending plain yoghurt, cucumber, onion, garlic, a squeeze of lime, fresh dill and a pinch of cumin. Season to taste and you’re ready to serve up this savoury delight!
