Classic American BBQ sauce is a go-to condiment when one thinks of a sweet, flavoursome, base to complement other ingredients. Chicken and BBQ sauce is a tried-and-tested match that always meets expectations, you’d struggle to go to any typical pizza parlour and not see it on the menu.
Combining this mix with the subtle tones of parsley, the sharp crunch of red onion, and finishing it off with some clumps of creamy mozzarella, makes for an easy-prep, indulgent, lunchtime treat.
Method
Firstly, mix the cooked chicken with 1 tablespoon of BBQ sauce until the chicken is sufficiently coated. Take a flour tortilla and spread another tablespoon of BBQ sauce around the centre, leaving space for the edges to form a crust. Place the chicken onto the tortilla and add chopped parsley, diced red onion and chunks of mozzarella before seasoning and placing on a baking tray. Bake for 5 to 7 minutes at 200c for optimum toasty crunch and melted cheesy delight.
