Sticking to a meal regime can be difficult,
and skipping breakfast in favour of those extra snoozes is a mistake we can all
be guilty of from time to time. It’s easy to forget breakfast is the most
important meal of the day; you’ve got to start as you mean to go on and ensure
you’re ready for the day ahead.
Fuel your morning and fight off the 11am
slump with these fast and fulfilling breakfast ideas:
Overnight
Oats
An increasingly popular hard-working
breakfast and health connoisseur’s choice, overnight oats are a simple and
delicious way to stay boosted through till lunchtime. Simply fill half a jar
with rolled oats and add milk until the top layer begins to float, then leave
the jar in the fridge overnight and let the oats soften. Yoghurt, blueberries
and linseed powder can be added as a finishing touch for those that like a
sweeter breakfast.
Chia
Seed Pot
Vibrant taste and simplicity is always a
winning combination. This Chia seed breakfast is packed with nutritional value
and super easy to prepare. Chia seeds are rich in calcium, iron, omega-3 fatty
acids and protein, perfect for a fast-paced lifestyle. Mix half a cup of Chia
seeds with half a cup of coconut milk and leave refrigerated overnight to form
a gel. This gel makes for a delicious and fulfilling base for fruit, honey and
other sweet extras.
Banana
Flapjack
The flapjack is an age-old breakfast snack,
loaded with fibre and sugars for that morning pick me up. Flapjack also serves
as a perfect canvas for other breakfast classics, in this case; the banana. For
a wholesome, flavour-filled banana flapjack simply melt a spoon of coconut oil
and two spoons of peanut butter into a baking tray, and add porridge oats and
mashed banana. Once blended, bake the mixture at 180’c for 20 minutes and, once
cooled, cut into bars to your preference.
Oat Pancakes
Pancakes are another great base for packing
in other ingredients to make a fast and fulfilling breakfast, and an excellent
change from milk and yoghurt heavy options. A jug of this in the fridge, ready
for prep every morning is ideal for those with a busy week’s schedule. Simply
blend porridge oats, cinnamon, milk, egg and vanilla in a processor to form a
thick batter, ready for frying up in the morning.
