#SimpleFacts food board – Olives, tomato and feta
As the summer season begins to decline, it’s time to make the most of what remains and revitalise our pallets with fresh and healthy dishes for the final stretch of sunshine. The delectable blend of salty olives with sharp feta cheese and rich tomatoes produce an alluring array of flavours, harkening to the Mediterranean shores and fields which provide much of our culinary inspiration. Whether it’s a classic side salad or a lusty main meal, here’s a few inspiring recipes to make the most of this much-loved Cypriot trio. 

Greek salad
This timeless salad needs little introduction. Simply combine the featured ingredients with some sliced cucumber, red onion and fresh salad leaves, then season generously with olive oil and oregano. Perfect as a fresh and light side or served on warm ciabatta, this diverse dish is welcome in any dinner spread.  

Baked meze
Baking this divine threesome is a sure-fire way to elevate the vibrant and wholesome flavours within. Combine the ingredients in a baking dish, splash with some olive oil, season with parsley and oregano and bake until soft. We recommend about 15 minutes for a perfect consistency. The tangy olives, juicy tomatoes and warmed feta make for an explosively-flavoursome accompaniment to flatbreads, pittas and any other dipping vehicle you desire. 

Cypriot pasta
It’s no secret that pasta is an excellent host for a myriad of continental flavours, and this trio is no exception. For a hearty main meal or carb-boosting lunch, try mixing a blend of the featured ingredients with freshly-cooked pasta and seasoning, it’s hard to go wrong with this one. 

Stuffed tomatoes
These pockets of delight bring home the beauty of simple gastronomy. Remove the tops from the tomatoes, scoop out the centre and stuff with olives, feta and desired seasoning. Once sufficiently filled, place on a baking tray, drizzle with olive oil and bake for 15 to 20 minutes. Top tip for this one: try slicing the olives finely for ultimate mouth-watering results and consistent flavour throughout. 

Baked tart 
Crispy pastry is a great way to animate those punchy Grecian tones. Try creating this tart with thin puff pastry; roll onto a baking tray, score lightly and brush with beaten egg to create the base for the featured ingredients. Bake the pastry for 15 minutes before adding the other ingredients for a strong-but-flaky base.
