#SimpleFacts – Blueberry Pancakes with Golden Syrup

Looking for the perfect excuse for a post-work pig out? Well, you’re in luck as Pancake Day is next week!

Of course, this means devouring a big old stack of fluffy, delicious pancakes, on a school night is totally acceptable. And when it comes to toppings, the options are endless.

Do you go for the traditional classic lemon and sugar combination? Prefer to keep it healthy with fruit? Or do you let loose with ice cream and liberal lashings of chocolate sauce? Pancakes are the perfect vessel for all manner of sweet delights!

A personal favourite of ours is the American-style pancake. Perfectly golden, thick and spongy, they soak up flavours delightfully. Now we’ve whet your appetite, here’s a recipe for our blueberry pancakes served with a generous drizzle of golden syrup.

So, imagine you’re sat looking out of the window of that American roadside diner and tuck in!

Method:

Firstly, add self-raising flour, baking powder and a pinch of salt to a mixing bowl and combine. Next, whisk an egg with milk and make a well in your dry ingredients. Slowly add the wet ingredients and whisk until the consistency is nice and smooth. Finally, add a touch of melted butter and a handful of blueberries and you’re ready to fry!

Use a ladle to scoop a portion of the mixture into your frying pan and cook for a couple of minutes on each side.

#SimpleFact: When the top side of the pancake is bubbling, it’s time to flip!

When they’re golden and fluffy, simply stack them up and serve with golden syrup.

Ingredients:

200g self-raising flour
1tsp. baking powder
Pinch of saltCherry tomatoes
300ml milk
1 eggBasil
Drizzle of melted butter
Blueberries
